We picked our Estate Vidal Blanc from our La Esperanza vineyard at 22° Brix
Winemaking
We dried the grapes for 30+ days that caused the grapes to dehydrate to a brix level of 34°. The grapes were pressed in a traditional basket press and were fermented until there was only 10° brix remaining. In an effort to bring extra complexity to this wine, we blended in some late harvest Vignoles
Aging
Aged in stainless steel for 2 years prior to bottling
