Harvest
The grapes were hand-picked from the Lone Silo Vineyard & transported immediately to the winery. They were then crushed & elevated directly into the press without the use of sulfites
Bottling
Crossflow filtered & bottled under screwcap to preserve freshness
Winemaking
The juice was cold settled to remove sediment. 1/3 went of the volume was transferred to neutral French oak puncheons & 2/3 to stainless steel to ferment at cool temperatures with native yeast. The wine remained on the lees until bottling to increase the mid palate weight.
