Growing Conditions

Pinot Noir is a crowning gem for the La Esperanza vineyard. Its heavy clay soils and proximity to the lake allow for fully ripe grapes. La Esperanza is our coolest growing site, being located right off of Lake Michigan.

Harvest

The fruit was picked on September 21st and harvested fully ripe without being too jammy or taking on over-ripe flavors that you can get from West Coast iterations of Pinot Noir. The fruit was then destemmed but not crushed into egg fermenters where it saw 3 days of cold soak

Bottling

Bottled with extremely low sulfites

Winemaking

Fermented with native yeast. It was pumped over once a day for the first 5 days, then gently punched down for the remainder of fermentation to preserve the elegance of the wine without becoming over-extracted

Aging

Aged with 25% new French oak for 11 months
