Hand harvested fruit from Kroupa Farms on the Old Mission Peninsula
Winemaking
25% underwent carbonic maceration for brightness & lift, while the rest fermented as whole berries for texture & depth. All parts were native fermented to preserve the vineyards natural expression.
Aging
Aged for 7 months in neutral French oak
