Aging

Aged on the lees, which are dead yeast particles that fall to the bottom of a fermentation vessel. Typically we rack (move) wine off of their lees after fermentation, but with our Chardonnay, we leave it on its lees for a period of time. Why? It adds to the aromas/flavors in a wine, which we really like for our Chardonnay!
