Palate
Bright flavors of green apple, lemon curd and fig supported by a crisp acidity in this French style Chardonnay.
Harvest
Chardonnay grapes were hand harvested on September 30th. The fruit was destemmed, crushed and immediately pressed.
Bottling
The wine was racked to tank, settled and then filtered for bottling. The goal of this wine is a classic White Burgundy Style.
Winemaking
CY 3079 yeast was used to inoculate the must. The fermenting must was transfered to used French oak barrels to complete fermentation
Aging
The finished wine was aged sur-lie in the barrels for 7 months with regular batonage or stirring of the lees and topping.
