Pinot Grigio isn’t a typical choice for sparkling wine but we like the richness, intensity, and spice it brings to traditional sparkling wine. 100% whole cluster pressing followed by fermentation in stainless steel. The base wine had more texture and richness to play off the acidity due to longer hang time in a cool fall which also allows us to use little to no dosage. Bottled in April of 2020 and disgorged in summer of 2023, there is an elegant autolytic character imparted from 3 years on the lees in the bottle.
