Palate
Extended lees aging gives this wine a richness and depth that you won't expect, but will wonder how you ever lived without. Some of Riesling's innate brightness is toned down in favor of mineral aromatics (flint, wet slate) and rich melon, candied ginger, and Kaffir lime on the palate.
Winemaking
Most Riesling is made in a manner meant to highlight the grape's inherent bright, fruit-driven qualities. This one's a little different. Rather than the customary (and brisk!) 4-5 months of aging, we took a bit longer - 15 months, to be exact. The wine was moved into 80-gallon stainless steel barrels and aged sur-lie style, resulting in a Riesling with enhanced weight and texture.
