"And it was all yellow..." Yellow and gold fruit is the star of the show here, from the rich vine-ripened plantain aromatics to the Golden Delicious apple and starfruit flavors. The supple texture and hint of vanilla speak to the ten months of barrel aging in oak and Acacia, but those looking for a heavy, popcorn-and-butter style Chard should look elsewhere.

Winemaking

Upon harvest the fruit was hand sorted, gently pressed, and cold settled for two days. The juice was then racked off the lees and sent to barrel for fermentation. Fermentation lasted 18 days using several specific Burgundian yeast strains. Ten months of barrel aging followed, with occasional lees stirring to build the mid-palate and broaden the finish. The wine was then racked to stainless steel, cold stabilized, filtered, and prepared for bottling in September of 2023.
