Because our fresh concords taste so phenomenally juicy right off the vine, we saw the common conception of concord wine as worth contesting. We add no sugar or “cellar magic” to the juice, simply fermenting it with champagne yeast and allowing the wine to develop naturally and organically. What results is a crisp, dry, wine showcasing the familiar fruitiness of a concord grape without any of the sugar.
