The palate continues with the classic cherry flavors that Pinot Noir creates.

Growing Conditions

The fruit for this wine comes from Benjamin's vineyard, which is the same vineyard where we grown the Pinot Noir for the sparkling Blanc de Noirs. This is one of the oldest Pinot Noir blocks. The majority of these vines are own-rooted which gives the fruit a stronger sense of terroir.

Winemaking

The fruit was crushed into our new tank press where it was sealed and cold soaked through the night in order to extract color and aromatics. After 16 hours, the wine was gently pressed off to get ready to ferment. This wine went through a cool one month fermentation.

Aging

Kept cool in stainless steel on minimal lees

Pinot Noir Rosé wines pair deliciously with thyme-roasted chicken, Gouda cheese, salmon, and salads.
