Nose
This wine gives off Bright Cherry aromatics followed by lightly ripe strawberries filling the glass.
Palate
The palate continues with the classic cherry flavors that Pinot Noir creates.
Growing Conditions
The fruit for this wine comes from Benjamin's vineyard, which is the same vineyard where we grow the Pinot Noir for the sparkling Blanc de Noirs. This is one of the oldest Pinot Noir blocks. The majority of these vines are own-rooted which gives the fruit a stronger sense of terroir.
Winemaking
The processing of this wine began with cold soaking the juice with half the skins of the fruit for this lot over night, then gently pressing the next day. This convoluted shooting from the hip was done with intention of extracting color and more complex fruit tones without losing the acidity needed to preserve the wine. It worked..this time
Aging
This wine was aged in stainless steel with minimal contact with the lees.
Food Pairing
Pinot Noir Rose wines pair deliciously with thyme-roasted chicken, Gouda cheese, salmon, and salads.
