Winemaking

Classic Chardonnay is a dry white that captures the fresh fruit character of the Chardonnay grape as it is layered with additional flavors built in by traditional wine making applications.

The fresh juice is fully fermented in French medium toast oak barrels that give this wine a light vanilla taste.

After fermentation the yeast is allowed to further flavor the wine, a process called sur lie aging. The extended yeast contact imparts a bread dough character.
