Hand-harvested into macro bin and processed the same day.

Winemaking

Crush and destemmed into variable capacity stainless steel tank. Fermented at 77F with 2 to 3 times daily manual punch downs. 22 days of skin contact prior to pressing.

Aging

Aged 12 months is French Oak Barrels ranging from 1 to 10 years old.
