Winemaking

Head Winemaker Brian Hosmer and his talented cellar team artfully craft our sustainably-grown fruit into an array of wines to charm every palate. Without any oak intervention and exclusively fermented and aged in stainless steel tanks, the characteristics of this wine stand up as a direct and spontaneous expression between fruit, soil, and the cool climate of our vineyards.

If you're interested in our oak-aged Pinot Grigio, we recommend trying our Proprietor's Reserve Pinot Gris!

Food Pairing

Savor it on its own as a refreshing apéritif or pair it with light dishes that highlight seafood, chicken, charcuterie, and soft cow's milk cheeses like Brie or Gorgonzola. It truly shines when enjoyed with dishes that incorporate fruity elements such as melon or stone fruits. Here are a few examples:

Seafood: The bright acidity and fruitiness of the wine make it a perfect match for seafood dishes. Try pairing it with grilled shrimp, lemon herb salmon, or seafood pasta with a light cream sauce.
Salads: Our Pinot Grigio's refreshing qualities make it an ideal partner for salads. Enjoy it with a classic Caesar salad, mixed greens with citrus vinaigrette, or a fresh caprese salad.
Light Pasta Dishes: Opt for lighter pasta dishes with white or cream-based sauces. Consider pairing the wine with linguine alfredo, pasta primavera, or spaghetti aglio e olio.
Soft Cheeses: our wine's acidity can cut through the richness of soft cheeses. Serve it alongside brie, camembert, Gorgonzola, or goat cheese. You can also try a cheese and fruit platter with slices of pear or apple.
Light Appetizers: our Pinot Grigio makes a delightful accompaniment to light appetizers. Consider serving it with bruschetta, smoked salmon canapés, or cucumber and dill cream cheese bites.
Grilled Vegetables: The wine's vibrant flavors complement the charred sweetness of grilled vegetables. Pair it with grilled asparagus, zucchini, or bell peppers for a delicious combination.
Asian Cuisine: our Pinot Grigio can work well with certain light or fruity Asian dishes. It pairs nicely with sushi rolls, Vietnamese spring rolls, or Thai green papaya salad.
