Winemaking

Head Winemaker Brian Hosmer and his talented cellar team artfully craft our sustainably-grown fruit into an array of wines to charm every palate. We harvest only the ripest fruit to show off a complex aromatic wheel and a luscious body. Without any oak intervention and exclusively fermented and aged in stainless steel tanks, this wine stands up as a direct and spontaneous expression between fruit, soil, and the cool climate of our vineyards.

Food Pairing

Food Pairing Notes

The sweetness, bright acidity, and flavors of ripe fruits and honey make this wine remarkable. Our Late Harvest Riesling is perfect for decadent, spicy dishes, including Indian, Thai, Tex-Mex, and Cajun cuisine, other than fruity and cheesy desserts and an American classic, the Buffalo Wings. Here are some food pairings that can enhance your enjoyment of Chateau Chantal's Late Harvest Riesling:

Cheese platter: The wine's sweetness will balance the saltiness of the cheese, creating a delightful contrast. The saltier the cheese, the more enjoyable the contrast becomes.
Spicy Asian cuisine: The sweetness of the wine can help tame the heat of spicy dishes like Thai and Indian curries or Szechuan-style stir-fries. The wine's acidity also cuts through the richness of coconut milk-based sauces, creating a harmonious balance.
Cajun cuisine: Known for its bold and flavorful dishes, you can create a delicious combination of spicy and sweet flavors. Examples are Jambalaya, Gumbo, Boudin, Crawfish Étouffée, and Blackened Catfish.
Spicy Barbecue: Whether it's glazed ribs or spicy barbecue chicken, the sweet and tangy flavors of the wine can complement the smoky and spicy elements of barbecue dishes. Hands down for a bowl of Buffalo Wings.
Spicy glazed ham: The sweet and tangy flavors of spicy glazed ham can be enhanced by our wine. The wine's sweetness and acidity can balance the richness of the ham and cut through any spiciness, resulting in a delicious combination.
Foie gras: The richness and fattiness of foie gras work well with our wine's sweet and acidic flavors. It's a classic pairing that brings out the best in both the wine and the dish. Another foie gras preparation, the torchon, typically served chilled, can be a fantastic pairing.
Fruit-based desserts: Pair our Late Harvest Riesling with desserts that feature fruits like peach cobbler, apple tart, or apricot crumble. The wine's fruity notes will complement the flavors of the dessert while the sweetness of the wine matches the sweetness of the fruits.
Caramelized Desserts: Desserts like crème brûlée or caramelized pear tart can be excellent companions to our Late Harvest Riesling. The wine's sweetness will complement the caramelization and add a refreshing touch.
