Harvest
Beautiful sunny conditions on October 19th with a high right around 70 degrees. October 20th started off nice, and towards the end of the day rain came through and a cold front followed behind it. The Cabernet Sauvignon, Merlot, and Cabernet Franc were all the last picks of the 2021 harvest.
Winemaking
Four-day cold soak followed by inoculation of yeast that lasted about 2 weeks before pressing.
Aging
Aged 18 months in a blend of new French oak and neutral barrels. All varietals were aged separately before a final blending trial was conducted in May 2023.
