Nose

Rich aromas of bright cherry and berry aromas intertwine with cocoa, vanilla and toast.

Palate

The palate is soft and silky, and the finish long and satisfying.

Bottling

Press wine was racked to barrels where it was aged 12 months in 30% new French oak.

Winemaking

Hand-harvested fruit was crushed and destemmed to 1/2-ton fermenters. must was inoculated with D254 yeast after a 4-day cold soak. Caps were plunged twice daily until dryness. Wine was pressed and racked after completing ML and after extended maceration of skins and seeds to extract tannin.

Aging

After barrel aging the final blend was assembled and polish filtered for bottling.

Food Pairing

Pairs well with salmon, pork and everything from the grill.
