Winemaking
Fruit from Berrien County was used to make this wine. Hand-harvested fruit was destemmed and crushed directly into fermenters where it would stay until the 1st fermentation was completed. The caps were hand punched daily to extract soft tannins from the skins and seeds.
Aging
The finished must was then pressed to tanks then racked into 20% new French oak barrels where it stayed for 12 months.
