Harvested from both Old Mission and Leelanau Peninsulas these three varietals express their individuality producing a dynamic yet traditional expression of Champagne.

Winemaking

This wine demonstrates a key component to sparkling wine, a strong backbone of acidity balanced with a roundness from sur-lee aging. The flavor evolves from the front to the back palate giving way to the expression of the yeast characters. Three varietals crushed together. Traditional method fermentation with 3 year bottle aging before disgorgement.
