Winemaking

Standard cool maceration, fermented to dry with commercial yeast strain then barrel aged in new and used French oak. Three years of barrel aging contribute to the wine's smooth finish, while its acid profile provided the ability to age gracefully maintaining its flavor and aroma.

Pork belly with plum sauce, grilled chicken with roasted vegetables, turkey with cranberry sauce, roasted duck, feta, goat cheese and brie.
