Harvest
Grapes are hand picked and whole cluster pressed in the fall. Only cuveé fractions are used for this product.
Winemaking
The juice is fermented in stainless steel. The wine is filtered and then tirage bottled during the winter/spring the following year. The wine is aged for 5 years en tirage until it is riddled, and disgorged.
