Harvest

Grapes are hand picked and whole cluster pressed in the fall.

Winemaking

Mainly cuveé fractions are used for this product. The juice is fermented in stainless steel. The wine is blended, filtered and then tirage bottled during the winter/spring the following year. The wine is aged for a minimum of 18 months en tirage until it is riddled, and disgorged.
