Winemaking
Picked ripe, in November, and pressed into old barrels, this wine fermented cold for a long duration. 20 year old barrels were used to limit the introduction of oak tannin.

Aging
A reserve style wine, this Riesling was fermented in neutral oak barrels and aged for 2 years in contact with the yeast. This makes for a rich and creamy wine that retains some fruit flavors but is intended to be texture driven.
