Winemaking

At the time, we planned to use this fruit to make ice wine, but Mother Nature was not cooperative. So, instead, the winemaking team decided to try something a little different. Because the fruit had been left to hang for ice wine, it had ripened to the last possible moment and had lost water weight, making it much more concentrated than if it had been harvested in October. The team fermented more sugar than usual, bringing the alcohol content up and the sugar content down.

Food Pairing

It is well-suited for sipping after a meal or paired with many desserts. Recommendations include a range of cheeses, from dry and sharp to soft and mild. Also consider shortbread, cheesecake, panna cotta, and crème brulée.
